Local Provisions to host wine pairing dinner - Feb. 11th






 The five-course dinner will feature wine pairings from Italian winemaker Vajra

On Thursday, February 11, 2016, at 7 p.m., Local Provisions will host a five-course wine pairing dinner celebrating winter flavors and ingredients. The special menu by chef Justin Burdett will feature seafood, meat and vegetable courses complemented by a selection of Vajra’s wines, a family-run Italian winery known for their elegance and fragrant varietals. Winemaker Francesca Vajra will join the dinner to discuss the wines and her family’s processes.

Guests will begin with Burdett’s roasted and raw vegetable course. Using a new roasting technique, Burdett will roast the vegetables with oyster shells and spent hops that will perfect complement the citrus notes and minerality of Varjas’ 2013 Luigi Baudana ‘Dragon’ Langhe Bianco of 80% Chardonnay and 20% Sauvignon, Riesling and Nascetta; the next course will feature Harker’s Island oysters encapselated in a smoked beet leather finished with carbonated grape and sorrel, which will be served with the 2014 G.D. Vajra Dolcetto d’Alba; for the third course, Burdett will feature charred octopus in a mortadella broth with local greens and dried fig paired with the G.D. Vajra Langhe Nebbiolo; next, Burdett will serve a pine smoked duck course paired with the 2011 G.D. Vajra Albe made with 100% Nebbiolo; to finish the special meal, the dessert course will feature a local buttermilk & tarragon panna cotta with quince sorbet served with the 2014 G.D. Vajra Aldo Moscato d’Asti.
